Recipes from Assam 2027 Desk Calendar

Assam has a wide variety of food, shaped by its many communities, regions and local ingredients. Rice is a staple, and vegetables, herbs, fish and meat are used in different ways across the state. Everyday home-cooked meals, dishes prepared for special occasions, there is a great variety in the way food is cooked and enjoyed. Most recipes use simple ingredients and fewer spices, allowing to retain the natural flavours of the food. Ingredients such as bamboo shoot, khar, tenga, sesame and different local herbs also give the food its distinct character. For this calendar, we have selected 12 recipes from Assam. There are starters, main courses and desserts making it one recipe for each month of the year. We hope you enjoy trying them at home. And if you do, please share your experience, and perhaps some pictures, with us.
